FIELD REPORT NO. 003
The Mellow Resonance of the Autumnal Frost
A
As the sun begins its descent toward the winter solstice and the Himalayan air turns sharp, the tea bushes at 3,000 meters prepare for dormancy. This is the “Late Season”—the final expression of the year.
“In the autumn, the mountain doesn’t shout; it whispers in notes of honey and copper.”
The Character of Cold
The plant, sensing the approaching frost, pulls its energy inward, concentrating sugars and minerals in the sap. This results in a cup that is naturally sweeter, lacking the sharp astringency of spring.
Tasting: Copper & Stone
Primary Notes: Wild honey, toasted nuts, and dried persimmon.
The Finish: A lingering, mineral “hum” that feels heavy on the palate—a direct result of high-altitude concentration.
