In the industrial world, time is an enemy to be conquered. In the Atelier, time is our most precise tool. While modern factories use high-velocity heated air, we utilize the Traditional Cold-Wither—allowing the alpine air to naturally reduce moisture over 18 to 24 hours.

The Molecular Advantage


Rapid heating breaks cell walls too violently. A slow, cold wither allows enzymes to transform the leaf’s juices into complex sugars and floral compounds gradually. This results in the silky texture that is the hallmark of our collections.
