In the industrial world, time is an enemy to be conquered. In the Atelier, time is our most precise tool. While modern factories use high-velocity heated air, we utilize the Traditional Cold-Wither—allowing the alpine air to naturally reduce moisture over 18 to 24 hours.
The Molecular Advantage
Rapid heating breaks cell walls too violently. A slow, cold wither allows enzymes to transform the leaf’s juices into complex sugars and floral compounds gradually. This results in the silky texture that is the hallmark of our collections.
The Air as an Ingredient
By withering in the low-humidity air of the peaks, the tea absorbs the mountain’s scent. It is a biological preservation of crispness that cannot be replicated in the humid lowlands.
